Broiled Sea Scallops Wrapped in Bacon

Ingredients
Six slices of quality bacon
Six large sea scallops
Method
Place six bacon strips on a sheet pan into a preheated 500°
oven.
Bake for approximately 10 minutes or until 3/4
doneness.
Place cooked bacon into a pie tin and cover with
plastic wrap to keep bacon pliable.
Wrap one bacon strip around each scallop (make sure
connective tissue is removed).
Using a cutting board as a flat surface, line up
three scallops and fun a bamboo skewer through. Repeat.
Place scallops on a greased sheet tray and into a
500° oven. Cook approximately five minutes per side.
Apricot chutney
Combine in a mixing bowl the following ingredients:
1 tsp freshly ground black pepper
1/4 cup strained prepared horseradish
1/2 cup apricot preserves
Mix thoroughly with a wire whip. Set aside.
Use to accompany scallops.
