The
Lucky Burger
Burger Ingredients
1 each 8 oz. hand-formed ground beef patty (fresh ground from
local butcher)
1 each burger bun (purchased from artisan bakery; we use Grand
Central Baking Co.)
Iceberg lettuce, shredded, soaked in ice water for 30 minutes, then
spun in a salad
spinner (this process will result in crisp lettuce)
2 each tomato slices
2 tsp. minced onions
2 oz. Tillamook smoked cheddar cheese or cheese of your choice
1-1/2 oz. burger sauce of your choice (we use a house made 1000
island dressing--
see below)
Salt and pepper to taste
Burger Cooking Method
Season your burger patty with salt and
pepper, then sear well on a hot grill, sauté pan or broiler. Follow
my cooking techniques in my
tips and cook to
your desired doneness. Place the cheese on the patty and melt under
a broiler.
Place the cheese side of the burger on the bottom
portion of the bun. This will prevent the hot items from heating the
cold vegetables on the burger. Pile the minced onion, tomato and
lettuce on top of the meat. Pour your burger sauce over the top and
cover with the top part of the bun and serve.
1000 Island Dressing
1 cup mayonnaise
1/4 cup sweet relish
2 tsp Dijon or whole grain mustard
1/2 tsp Kosher salt
1/8 tsp black pepper
1/4 cup ketchup
Combine all ingredients and mix thoroughly. Allow to
set in the refrigerator for at least an hour prior to service in
order to allow the flavors to combine.
