Washington Apple Slaw
Serves 2 as an appetizer
Braeburn Apple Vinaigrette
1 each Braeburn apple, cored and cubed
1 each shallot, chopped
1 tbsp Dijon mustard
1 cup cider vinegar
2 cups salad oil
Salt and pepper
Method
In a blender, add all ingredients
except salad oil. Puree on high until smooth. Slowly drizzle oil in
to form an emulsion; season with salt and pepper.

1 each Granny Smith apple, julienne
1 each Braeburn apple, julienne
1/4 cup apple vinaigrette
3 tbsp chives
Juice of 1 lemon
1 each red bell pepper, julienne
1 each small red onion, julienne
1/4 cup chopped cilantro
