Grilled Pacific Mahi Mahi, Basil-Cilantro Puree, Citrus Salad
Serves 1
7 oz mahi mahi
3 oz fresh basil
Citrus wedges
1.5 oz cilantro sprigs
Garlic
White wine vinegar
Salt and pepper to taste
Shaved fennel
Instructions
Grill mahi mahi, finish in oven.
Toss citrus wedges in olive oil, salt and pepper.
Make basil-cilantro sauce by mixing basil, cilantro, olive oil,
vinegar and garlic in a food processor.
Arrange the citrus wedges on a dinner plate and top with mahi, shaved
fennel and sauce.
