Chef José Chavez's Ceviche

Serves 4 as an appetizer
Ingredients
1 lb fresh halibut, cubed 1/4"
1 cup fresh squeezed lime juice, strained
1 each jalapeño pepper, seeded and minced
2 tsp fresh cilantro, chopped
1/2 red onion, thinly sliced and rinsed
1 each avocado, diced 1/4"
1 each green mango, diced 1/4"
Salt and pepper to taste
Directions

Combine halibut, lime juice, red onion and jalapeño
pepper. Let marinade for two hours.

Add remaining ingredients.

Serve with corn tostadas or plantain chips or just by
itself.
