Lisa Dupar's Pomegranate Glazed Pork Chops

GLAZE

2 slices of bacon cut into strips
1/4 onions – sliced julienne in strips
1.5 T. chopped FRESHLY peeled garlic
2 T. cup soy sauce
6 T. of "Perfect Puree" Pomegranate
¼ tsp. chopped fresh ginger
2 T. Cup of maple syrup
1 T. of good balsamic vinegar

CHOPS

4 4 oz. pork chops
4 slices of bacon for garnish
Pomegranate seeds
salt to taste
pepper to taste

Pomegranate Glaze

Preheat Oven to 350 degrees. Place bacon, onions & fresh garlic together in a large saucepan. Sweat the bacon, onions and fresh garlic together until translucent on low heat for 3 – 4 minutes. Pull mix out and let grease drain. In the same saucepan, reduce the soy, pomegranate puree, ginger, syrup, and vinegar until it gets syrupy. Add the bacon onion mix back in. Cool.

Pork Chops

Season with salt and pepper and grill 4- 4oz. pork chops. Pull off grill after marked on both sides (approximately 1 minute each side) and place in skillet. Spoon the glaze over the chops and finish heating in pre-heated oven for 8 – 10 minutes or until internal temperature is 160 degrees - be careful not to overcook!

Serving: Place each pork chop on the plate with glaze, garnish with pomegranate seeds and a strip of pre-cooked bacon. Serve with mashed potatoes and seasonal veggies.
